Sweet Potato Fries

Here is a great recipe from Walter Willett’s Eat, Drink, and Be Healthy. This is a recipe for “Spicy Sweet Potato Fries” that my wife and I really enjoy:

1 large sweet potato, peeled, cut into matchstick pieces

1 tablespoon olive or canola oil

1/2 teaspoon freshly ground black pepper

1/4 teaspoon chili powder

1/4 teaspoon ground cumin

1/4 teaspoon paprika

salt to taste (if desired)

Vegetable cooking spray or oil

1. Preheat the oven to 450 degrees F

2. Place the sweet potato pieces in a bowl and drizzle with the oil; toss gently to coat. Combine the next four ingredients and the salt, if using, and sprinkle over the sweet potatoes; toss gently to coat. Place the sweet potatoes on a large baking sheet lightly coated with oil or vegetable spray. Bake at 450 degrees F for 12-15 minutes or until the ends begin to crisp. Remove from oven and serve.

Sweet Potato Fries

Yield: 3 1/2 cups; Serving: 1/2 cup

Calories: 52; Protein: 0.6 g; Carbohydrate: 8 g; Fat: 2.1 g; Fiber: 1.1 g1

    LOVE sweet potato fries! So delicious and easy. I have a hard time getting them to crisp in my oven, but they’re so tasty even when not completely crisp.

    I tried them for the first time last night after reviewing all of the people who attempted to make them, I put them it the microwave first and cooked them 1/2 to 3/4 way done, then I covered them with olive oil, salt and pepper at 450 degrees and kept turning them until they were brown, wonderful….oh, and crisp…..good luck

    Really glad to find this recipe. I first had sweet potato fries in Albuquerque about 8 years ago with a great tuna salad that had apples and nutmeg in it. We’ve since moved to Florida and have been looking for the recipe ever since.

    I was searching for a healthy recipe for fries and came across your site. I never thought cooking fries with sweet potatoes, it is a very nice idea!
