Roasted Asparagus and Sweet Potato Fries

Here’s part of what we had for dinner last night (sorry not a great pic –with my cell phone).  Sweet potato fries and roasted asparagus.  Click on the link for the sweet potato fries recipe that we use and here’s how we do the asparagus:

1. Rinse off asparagus and break off the ends.

2. Put on a baking sheet.

3. Lightly drizzle some olive oil and salt/pepper.  Make sure they are all coated.

4. Bake at 450 F for 10-13 minutes or until you feel they are done.  

It’s pretty simple.  

Sweet potatoes and asparagus are by far my favorite vegetables.  Not too bad for us either.
