Zucchini

One of my favorite things to do is cook with my wife.  For some reason, it’s just way more fun when we do it together.  Pictured above is what we made last night.  We had zucchini, mushrooms, sweet potatoes and chicken. 

The zucchini was awesome.  We had never bought it to prepare at home and I think we’ll continue to do it.  All we did was slice it up, cut the slices in half, and then cook them in a tiny bit of olive oil in a pan.  A few mins on each side was alll it needed.  We also added a little salt, pepper, and parmesan cheese. 

Very tasty and good for you too.

According to Nutritiondata.com, zucchini is “a good source of Protein, Vitamin A, Thiamin, Niacin, Phosphorus and Copper, and a very good source of Dietary Fiber, Vitamin C, Vitamin K, Riboflavin, Vitamin B6, Folate, Magnesium, Potassium and Manganese.”

    I love zucchini, too. Kip and I love to cook Japanese steakhouse-style food at home together, and we sautee zucchini, mushrooms, onions and broccoli together in a soy sauce. It is so good!
