Black Bean Week!

So this week has been black bean week at our house.  We found this awesome recipe for crock pot black beans, tried it, and loved it.  We now have a pot full of black beans to enjoy throughout the week.

I’ve pretty much eaten the beans with everything this week.  I had bean sandwiches, beans mixed with scrambled eggs, with fajitas, and in a salad (pictured above).  The salad was just spinach, tomatoes, grilled chicken, the beans, and a little feta cheese on top.  Delicious.

I’m half Guatemalan so eating beans is nothing new.  I love them.  My wife … well… they are growing on her little by little.  :)

In case you didn’t know, beans can be good for you.  Here’s what NutritionData.com says about black beans:

“This food is very low in Saturated Fat, Cholesterol and Sodium. It is also a good source of Protein, Thiamin, Magnesium, Phosphorus and Manganese, and a very good source of Dietary Fiber and Folate.”

Again, try the recipe.  It’s good.  If you have any other recipes with black beans, or any other kind of beans, holler at me.  I’m wanting more.

    I love black beans, too! We just had them this week in a salad – with avocado, shrimp, green and red peppers, spinach, mixed with some salsa – so good!
