Chicken Chimichanga

One of my favorite all-time dishes is the chicken chimichanga.  I know, usually not that great for ya health-wise, but I found a good recipe here that cooks them in the oven instead of soaking/frying them in oil.

Here’s what mine looked like:

I also changed up the recipe a bit.   In the filling I added black beans and used less cheese.  The recipe calls for green onions but I didn’t have any so I used red ones.  To top them I added sour cream, avocados, and roma tomatoes.  Also, instead of brushing them with butter or margarine, I just sprayed them with some olive oil cooking spray.

These were really good.  Wife loved them, baby loved them (she smiled at us while we ate them), and I loved them.  Happy chimichanga eating!
