Zucchini, Mushroom, Garlic and Spinach Salad

Had this last night w/ grilled chicken.  Few cloves of finely chopped garlic sauteed in olive oil.  Add chopped zucchini and mushrooms.  Let it all cook together for a bit.  Add some feta cheese and then add some chopped spinach.  It was really good on top of the chicken.

Memorial Day Choripan

We had a great Memorial Day holiday. I ran 10 miles in the morning and in the afternoon we grilled up some veggies and some chorizo Argentino to make choripan.

Cinco de Mayo Feast

This is what I made for our Cinco de Mayo feast yesterday.  Oven-baked chicken chimichangas.  Topped with sour cream, fresh avocado and tomatoes.  Also, I used pinto beans and corn inside this time, in addition to the chicken, cheese, and salsa.

Had to have the chips, salsa, and guac to go with it!

Easy Turkey Burger Recipe

Made turkey burgers for dinner the other night.  Oven-roasted red potatoes along with them.  Delicious and easy to make. 
Here’s what you’ll need:
1-1.5 lbs Ground Turkey
1 Zucchini
1 egg
Worchestershire Sauce
Garlic Powder
Onion Powder
Salt
Peppper
Whole wheat buns
Whatever toppings you want.
What I did:
