<p style="text-align: left;">This was the Sunday Dinner I prepared for the wife and I tonight. So good.</p>
<p style="text-align: left;">No need to add a bunch of crap to veggies to &#8220;make them taste good.&#8221; That&#8217;s weak. All I did was add spinach to a bowl. Then I added cherry tomatoes (sliced in half), steamed broccoli and sauteed zucchini (sauteed in a bit of olive oil with a touch of pepper and salt).</p>
<p style="text-align: left;">Also had oven-baked, spice-rubbed pork to go along with it.</p>
<p style="text-align: left;">Now that was a good dinner.</p>

Had this last night w/ grilled chicken.  Few cloves of finely chopped garlic sauteed in olive oil.  Add chopped zucchini and mushrooms.  Let it all cook together for a bit.  Add some feta cheese and then add some chopped spinach.  It was really good on top of the chicken.

This is what I made for our Cinco de Mayo feast yesterday.  Oven-baked chicken chimichangas.  Topped with sour cream, fresh avocado and tomatoes.  Also, I used pinto beans and corn inside this time, in addition to the chicken, cheese, and salsa.

			<content:encoded><![CDATA[<p>Maybe you&#8217;ve seen this and maybe you haven&#8217;t, but I wanted to pass this along.  <a href="http://fedupwithschoollunch.blogspot.com/" target="_blank">Fed Up with Lunch: The School Lunch Project</a> is a blog by a teacher who is eating school lunch everyday.  Read <a href="http://fedupwithschoollunch.blogspot.com/2010/03/faq.html" target="_blank">why she&#8217;s doing it and some other FAQs</a>.</p>
<p>It&#8217;s pretty interesting to see the food that the schools serve and to see the comments this teacher makes.  She is experiencing what the kids eat everyday during school lunch. </p>
<p>I don&#8217;t know much about elementary schools and their policies, but from what I&#8217;ve read and heard, recess is becoming a thing of the past.  I bring this up because it was mentioned in the above FAQs.  At this particular school, the kids have 20 mins for lunch and no recess. </p>
<p>When I was in elementary school (I&#8217;m 27, to give you a reference point) we had 3 recesses each day: a 15 min recess in the morning, a 40-50 min lunch/recess in the middle of the day, and a 15 min recess in the afternoon.  That was awesome.  I remember playing soccer, basketball, and even jumping rope sometimes.  What is happening in today&#8217;s world? </p>
<p>I know it&#8217;s a complicated issue that I don&#8217;t really understand, but really?  No recess for kids at school?  That&#8217;s a shame. </p>

<p style="text-align: left;">Garlic Powder</p>
<p style="text-align: left;">Onion Powder</p>
<p style="text-align: left;">Salt</p>
<p style="text-align: left;">Peppper</p>
<p style="text-align: left;">Whole wheat buns</p>
<p style="text-align: left;">Whatever toppings you want.</p>
<p style="text-align: left;"><strong>What I did</strong>:</p>
<p style="text-align: left;">Put ground turkey into a large bowl.  Shred up zucchini into turkey.  Add the egg, and everything else.  Mix together with hands.  Gets gooey.  Sorry about the measurments on the spices and stuff.  Just add it until it smells good (how amateur is that!).  Doesn&#8217;t need very much.  Just a bit of everything listed.</p>
<p style="text-align: left;">Broil in the oven until cooked (just a few mins).  Top with whatever you want (we had spinach and tomatoes), put it on your bun and enjoy it.  </p>

			<content:encoded><![CDATA[<p>I had some fun in the kitchen last night.  Decided to try something new for dinner and see if it would work out.  First, let me post a picture of my little kitchen helper:</p>

<p style="text-align: left;">And by helper, I mean she found a drawer she liked and took everything out and left it on the floor.  Oh well.</p>
<p style="text-align: left;">Anyway, I chopped up some chicken breast, then grilled it.  Added frozen spinach and other frozen vegetables (bag of mixed veggies).  Let it all cook together.  Put the veggie/chicken mixture in a bowl and added a little bit of cream cheese and feta cheese, salt, pepper, and thyme.  Then, I put that into a tortilla and folded it like a burrito and baked it in the oven for about 10-15 mins.  Here&#8217;s what it looked like:</p>

<p style="text-align: left;">My own version of a &#8220;hot pocket&#8221; I guess.  It was pretty good.  My wife always gets a little nervous when I start creating something, but this was a good one .  : ) </p>
<p style="text-align: left;">Look, I&#8217;m clearly no expert chef, but I do like to get in the kitchen and create.  Give it a try, you never know what you might create (good or bad!). </p>
