Creative in the Kitchen

Two-egg omelet with spinach, onions and tomatoes and a little cheese. Topped with avocado and more tomatoes. So fresh and so good.
This was our dinner the other night after not wanting to make anything that would take too long. Get creative in your kitchen. You never know what you can come up with.

Zucchini, Mushroom, Garlic and Spinach Salad

Had this last night w/ grilled chicken. Few cloves of finely chopped garlic sauteed in olive oil. Add chopped zucchini and mushrooms. Let it all cook together for a bit. Add some feta cheese and then add some chopped spinach. It was really good on top of the chicken.

Proud Daddy

I’m a proud daddy. Here’s my 15 month-old daughter eating some broccoli, sweet potatoes and chicken for lunch yesterday. Washing it all down with a fruit smoothie with spinach. Love it.
